Just another fantastic way to use up those Thanksgiving leftovers.
As much as we love the tried and true Thanksgiving leftover sandwich - this stuffed baguette with brie, bacon, cranberry sauce, scallions and turkey is the perfect upgrade. The brie gets warm and gooey while the baguette gets nice and crisp - and don't get us started on that crispy & salty bacon.
The stuffed baguette comes together easy enough - slice out a trench in the middle of your loaf and layer with cranberry sauce, brie, turkey, bacon, scallions and of course, more brie. Then top it off with a little more cranberry sauce, scallions and bacon. Voila - a crowd pleasing lunch for the day after.
Turkey, Bacon, Brie & Cranberry Stuffed Baguette
Servings: 4-6 | Prep Time: 20 Minutes
INGREDIENTS
2 Demi Baguettes (I used an Italian baguette from the supermarket, feel free to use a more classic French baguette)
1 cup Turkey, cubed
1/2 cup Cranberry Sauce
8 oz Brie, sliced
4 slices Bacon, crumbled
2 Scallions, thinly sliced on the bias
DIRECTIONS
1. Preheat oven to 350F. Cut out a trench of bread length-wise from the middle of each baguette.
2. Layer with spoonfuls of cranberry sauce, brie, turkey, bacon, scallions and more brie to top it off. Bake in the oven 5-10 minutes until brie is melted. Top with a few extra spoonfuls of cranberry sauce, bacon and scallions. Slice and serve immediately.
